Jarda (জর্দা)

Ingredients :
Basmati rice-1 cup
Sugar-1/2 cup or according to your taste
Orange food color-1/4 ts( dissolve in 2 Tbs water)
Ghee-2 Tbs
Raisin-10-12 pieces
Cardamom-2 pieces
Cinnamon stick-1
Cloves-2 pieces
Bay leaves-2 pieces
Almond-2 Tbs(chopped)
Pistachios-1 Tbs(chopped)
Kalojam-2 pieces or made in small round pieces(optional)

Procedure :
Wash Rice. Take 4-5 cup water in a deep pan and add rice. Cook until rice is almost done.(about 20 minutes). Before removing from the burner add food color to the rice and wait 1/2 minutes.
Drain water through a strainer and wash under cold running water so that the rice grains remain separate.
Heat ghee in a pan. Saute cardamom, cinnamon stick, raisin, cloves, bay leaves, and 1 Tbs chopped almond. Now add rice and stir. Add sugar, mix well and then cover it.
Cook it in low heat for about 15 minutes. Stir occasionally. Then uncover it and stir to remove excess moisture from the rice.
Now put in a serving dish and garnish with pistachios, almond and kalojam.
